And fresh episodes of Eubanks' Card Sharks continue on.
Assuming GSN continues their practice of skipping holiday-themed episodes, I think it's a safe bet that the first show of 1988 will air on Tuesday, most likely a continuation of the Ernie vs. Gloria match.

GSN skipped the Christmas 1987 episodes, and jumped to January 4, 1988.
These episodes may have been taped out of order. John Ricci, Jr. posted a clip from a studio master of episode #519 (Recorded on December 13, 1987) with Bob Goen making a cameo to promote Blackout.

Just to mentionn that, possibly very soon, GSN may air four straight episodes that were previously aired on GSN between 2005 and early-2008. Among the episodes was a Scotsman named Scotty (not the same one who was on in the Summer of 1987), and I think prison guards were the audience polling group.
During that range of episodes, the black 3D effect in the $32,000 chyron graphic during the intro becomes red. By mid-February 1988, such graphic becomes animated, each digit flipping in simultaneously.
I did see a short clip from 1988 on YouTube one time that showed a teaser of a future audience polling group being firefighters. It seems as if the teasers that were launched in late-October 1987 were for a short time, but would most likely return by Spring 1988. It could be inferred that the firefighters polling group would be used in late-April or May 1988. We do know the audience polling groups for June 1988, based on episodes that are or were on YouTube.
It would really be nice for some May 1988 episodes to surface on YouTube someday - as far as I know, they are very hard to come by at this point.

GSN skipped the Christmas 1987 episodes, and jumped to January 4, 1988. These episodes may have been taped out of order. Here's the reason, the January 4-22, 1988 shows are labeled as episodes #498 to #512, and as you said, the December 21-31 YPW Christmas shows are labeled as episodes #513 to #520 so literally, GSN didn't skip the YPW Christmas shows, it'll be seen in a couple of weeks. Now, when GSN was rerunning the Jeopardy! episodes from Season 14, I'm very surprised that they were airing the February 1998 ToC then the 2 weeks where the runners-up received the Sears Gift Certificate(where GSN should've aired them the other way around since the latter still had the DJ! round money values seen popping up after the 2nd commercial break and the February 1998 ToC episodes were the first set of episodes where the DJ! round money values already loaded in, which has been the case ever since).

Don't be so sure if they'll be airing them or not. If they jump from #512 to #521, then they have been skipped.

Knowing GSN's practice since late-2005, They will be skipped and reserved for next December, if these episodes are part of GSN's latest lease. If GSN does air the Christmas-themed episodes in the coming weeks, I'll be quite shocked (but not in a bad way).

Definitely not, perhaps because the limited run was only into July or August 1987 at the time and so far away from the end of 1987. GSN also didn't air Christmas 1984 episodes of Press Your Luck in the current lease, and as of right now, GSN is currently into February 1985. That said, I think any holiday-themed episodes in any lease(s) will be reserved for later this year. At least for Press Your Luck.

Ok. Seems a little weird that if they leased them they didn't air last Christmas. But that's just me.

I also have a gut feeling that the leases for Press Your Luck and maybe Card Sharks have a lot of episodes. They definitely have at least 160 episodes for each of those leases (Card Sharks has aired more than 150 episodes so far, so this is a sign that GSN has at least 160 episodes). If GSN has 200 episodes or close to it, this could be due to the solid ratings the previous leases had experienced during 2014 to 2016, since they were new-to-GSN episodes for Press Your Luck, and episodes not shown on GSN since 2002 for Eubanks' Card Sharks.

Possibly this Friday, is Mo vs. Joe, originally aired on January 14, 1988. I saw the episode on YT a while back, along with three episodes that followed, and it had the 2004 GSN logo in the top right corner. My question is, did these episodes air on GSN during a Saturday night mini-marathon in early-2007? I do know there were mini-marathons consisting of four episodes of one specific classic in 2007. The "Saturday Night Classics" series of blocks in 2005 had five episodes, if I recall - and I don't think any version of Card Sharks aired during those 2005 blocks.

As I recall, episodes 171-175(aka the final installment of YPW) of Rafferty's Card Sharks aired during that marathon in 2005 and episode #171 had the full closing IIRC, considering that neither his version of this or Blockbusters were never shown as a Sunday night GOTW, Faux Pause Picks nor As Seen On Theater back in the day.

Actually, according to my episode guide, Episode 511 - the last fresh episode before rewinding to May 1987 - is what's scheduled. That was the January 22, 1988 episode. The holiday-themed episodes were apparently labeled as Eps. 512 (not 513) to 520. I also realized that, when GSN aired Family Feud '94 instead of Card Sharks and Press Your Luck last October 28, Ep. 371 of Eubanks' Card Sharks got skipped, but I believe Press Your Luck never got skipped (otherwise the Lori/Cathy spin battle would have aired on Veteran's Day). So there may be a chance that Ep. 371 may be skipped altogether, and there may have been 161 episodes aired by May 15, and if true, there might be a chance we might get all nine of the Christmas-decorated Young People's Week episodes this coming December after all.
